Here's a sampling of some of the oysters you may find:
Buckly Bay (3-4 inch)
Grown in British Columbia these plump oysters begin their life suspended. After about one year they are placed in the intertidal waters of Baynes Sound. Harvest takes place within six months. The slightly salty flavored morsels have a cucumber aftertaste.
Kumamoto (1.5-2.5 inch)
Cultivated in several areas along the West Coast, this smallest of the Gigas family is considered a treat to oyster lovers. Its deep, cupped, ridged shell contains a creamy flavor, plump and mild with a fruity aftertaste.
Pearl Bay (2-3 inch)
Situated in the unspoiled wilderness of Jervis Inlet, British Columbia. These award winning, pampered morsels are grown in stacks of plastic trays, suspended in the swift upper currents. They feed on phytoplankton (plant) giving them a sweet, very mild flavor with hardly any aftertaste. The beautiful high ridged shells have shades of white, gold and purple.
Sinku (2-3 inch)
Tray cultured in the unspoiled wilderness of Jervis Inlet, British Columbia, they thrive in this remote region of Canada, only accessed by boat or floatplane. From deep, cold water they feed on zooplankton (animal). This give them a more complex, saltier bite, with a sweet aftertaste. The word Sinku reflects its Salish Indian meaning; clear, running water.
Fanny Bay (2-3 inch)
From Fanny Bay, British Clumbia, this sweet, salty oyster has a strong clean aftertaste. The shell is thin and fluted.
Quilcene Bay (2-3 inch)
Washington’s Quilcene Bay produces this oyster of delicate flavor. It is slightly salty, sweet with a cucumbery aftertaste.
Sunset Beach (3-4 inch)
Sunset Beach is an idyllic setting on southern Hood Canal looking at the expanse of the Olympic Mountains to the northwest. It is a beach grown oyster, thick shelled and deep cupped, hand graded and cleaned by a small but devoted group of farmers. The Sunset is mildly salty and sweet, with a noticeable melon aftertaste to go with its crunchy texture.
Gigamoto (1.5-2.5 inch)
The Gigamoto is an (oyster virgin) favorite. They have a small, deeply cupped elongated shell with shades of the cream and purple normally associated with the Pacific Oyster. The plump oyster’s flavor starts out mildly salty and ends in a nice sweet aftertaste.
Gorge Inlet (2-3 inch)
From the Cortes Island, in the mouth of Gorge inlet, British Columbia. These oysters have a sophisticated rich and delicate flavor. |
